  • 1/2 cup Unsalted Butter 115g
  • 1/4 cup All-Purpose Flour 30g
  • 1 cup Heavy Cream 240ml
  • 1 cup Whole Milk 240ml
  • 1/2 cup Parmesan Cheese 50g, freshly grated
  • 2 tbsp Fresh Parsley Finely chopped
  • 1 tsp Cracked Black Pepper To taste

Method
 

Roast Garlic
  1. Roast garlic at 400°F (200°C) for 40 minutes until cloves are soft and golden-brown.
Make Sauce
  1. Melt butter in a saucepan and whisk in flour for 2 minutes over medium-low heat.
  2. Slowly whisk in milk and cream. Simmer until the sauce is thick and glossy.
  3. Stir in mashed roasted garlic, Parmesan, parsley, and black pepper. Garnish with a whole roasted clove in a white ramekin.
