  • 8 cups Seedless Watermelon Cubed and frozen (1.2kg)
  • 1/4 cup Granulated Sugar Or honey (50g)
  • 2 tbsp Lime Juice Freshly squeezed (30ml)
  • 1 pinch Sea Salt To balance sweetness
  • 1 sprig Fresh Mint For garnish

Equipment

  • 1 High-powered blender Used to process the frozen fruit.
  • 1 Baking Sheet To freeze the watermelon cubes.
  • 1 Ice Cream Scoop For forming rounded scoops.

Method
 

Preparation
  1. Place watermelon cubes in a single layer on a baking sheet and freeze for 4 hours until solid.
  2. Hollow out a small watermelon to create a bowl, leaving 1/2 inch of pith, and place in the freezer.
Blending and Freezing
  1. Combine frozen cubes, sugar, lime juice, and salt in a blender. Pulse until a grainy, frozen watermelon puree forms.
  2. Transfer to a shallow dish and freeze for another 2 hours to allow visible frost and crystals to develop.
  3. Scoop three large rounds into the chilled rind bowl and garnish with a fresh mint sprig.

Notes

Use a ripe watermelon for the best vibrant pink color.
Dip your scoop in warm water for the perfect rounded shape.
