Preparation
- Place watermelon cubes in a single layer on a baking sheet and freeze for 4 hours until solid.
- Hollow out a small watermelon to create a bowl, leaving 1/2 inch of pith, and place in the freezer.
Blending and Freezing
- Combine frozen cubes, sugar, lime juice, and salt in a blender. Pulse until a grainy, frozen watermelon puree forms.
- Transfer to a shallow dish and freeze for another 2 hours to allow visible frost and crystals to develop.
- Scoop three large rounds into the chilled rind bowl and garnish with a fresh mint sprig.
