Method
Prepare the Base
- In a large bowl, whisk together the Greek yogurt, honey, and vanilla until smooth and creamy.
- Spread the mixture onto a parchment-lined baking sheet until it is roughly 1/2 inch thick.
Create the Swirls
- Take three small portions of the yogurt and tint them pastel pink, soft lavender, and sky blue using gel coloring.
- Drop dollops of the colored yogurt onto the white base and use a toothpick to gently swirl them together in a marbled pattern.
Decorate and Freeze
- Densely decorate the surface with star-shaped sprinkles, rainbow nonpareils, and silver sugar pearls.
- Place in the freezer for at least 3-4 hours, or until frozen solid with visible frosty edges.
- Lift the parchment paper and break the bark into irregular, jagged shards.
Notes
Use full-fat yogurt for the creamiest texture and to prevent excess iciness.
Work quickly when breaking into shards as the thin yogurt melts fast.
