Sausage Gravy Breakfast Pizza Ingredients
  • 2 cups all-purpose flour 240g
  • 1 tbsp baking powder 15g
  • 1/2 tsp salt 3g
  • 1/3 cup cold butter 75g, cut into cubes
  • 3/4 cup whole milk 180ml
  • 1 lb ground breakfast sausage 450g
  • 1/4 cup all-purpose flour 30g
  • 2 cups whole milk 480ml
  • 1 tsp black pepper 2g
  • 1/2 tsp salt 3g
  • 1 cup shredded mozzarella cheese 112g
  • 1 cup shredded sharp cheddar cheese 112g
  • 2 tbsp fresh green chives 6g, finely chopped

Equipment

  • 1 12-inch Pizza Pan Or a large cast-iron skillet for baking.
  • 1 Large Skillet For browning the sausage and making the gravy.

Method

Making the Sausage Gravy Breakfast Pizza
  1. Preheat your oven to 400°F (200°C). In a large bowl, whisk together the flour, baking powder, and salt for the crust.
  2. Cut the cold butter into the dry ingredients using a pastry blender until it resembles coarse crumbs. Pour in the milk and fold until a shaggy dough forms.
  3. Turn the dough onto a floured surface, knead gently 3-4 times, and press evenly into a greased 12-inch pizza pan. Bake for 8-10 minutes until lightly set.
  4. Heat a large skillet over medium-high heat. Add the sausage and cook until you have chunky browned sausage crumbles with no pink remaining. Do not drain the fat.
  5. Sprinkle the flour over the cooked sausage and cook for 1 minute. Slowly whisk in the milk. Simmer until it becomes a thick, creamy white sausage gravy. Season with salt and heavy black pepper.
  6. Spread the hot sausage gravy evenly over the pre-baked crust, leaving a small border. Top with the shredded mozzarella and cheddar cheese.
  7. Bake for 12-15 minutes until the cheese is golden-brown and bubbly. Let rest for 5 minutes, garnish with fresh green chives, and slice.

Notes

Pre-baking the crust is crucial to prevent the bottom from getting soggy.
Ensure your butter is ice-cold to create flaky layers in your biscuit crust.
