Ingredients
  

Main Ingredients
  • 1 lb ground beef (85/15) Browned and drained.
  • 1 packet taco seasoning 1 oz (28g) packet.
  • 32 oz processed cheese (like Velveeta) Cut into cubes.
  • 10 oz diced tomatoes and green chiles (Rotel) 1 can, completely undrained.
  • 4 oz cream cheese Cut into cubes.

Equipment

  • 1 Heavy-bottomed Skillet Essential for properly searing the ground beef.
  • 1 Slow Cooker (3 or 4 quart) Used for melting the cheese evenly.

Method
 

Preparation and Cooking
  1. Heat a skillet over medium-high heat. Add the ground beef and cook for 5-7 minutes until browned and no pink remains. Drain the grease.
  2. Return the beef to the skillet over medium heat. Stir in the taco seasoning and 1/4 cup of water. Simmer for 2-3 minutes until the liquid reduces.
  3. Transfer the seasoned beef to the slow cooker. Add the cubed processed cheese, cubed cream cheese, and the undrained can of diced tomatoes and green chiles.
  4. Cover and cook on LOW for 1.5 to 2 hours, stirring every 30 minutes until the dip is thick, smooth, and bubbling at the edges. Serve warm with tortilla chips.

Notes

Drain your beef thoroughly to prevent a greasy dip.
If the dip becomes too thick while warming, stir in 1 tablespoon of milk at a time until the desired consistency is reached.
