Ingredients
  

Pizza Ingredients
  • 1 cup full-fat cottage cheese 225g
  • 1 large egg 50g
  • 1/2 cup blanched almond flour 50g
  • 1 tsp garlic powder 3g
  • 1 tsp Italian seasoning 3g
  • 1/2 cup pizza sauce 120ml
  • 1 cup shredded mozzarella cheese 112g, low-moisture
  • 2 oz sliced pepperoni 56g
  • 1 tbsp fresh parsley 4g, chopped
  • 1 tbsp grated parmesan cheese 5g

Equipment

  • 1 Air Fryer Basket or oven style works perfectly.
  • 1 Food Processor or Blender Essential for smoothing out the cottage cheese curds.
  • 1 Parchment Paper Prevents the batter from sticking to the air fryer basket.

Method
 

Making the Pizza
  1. Add the cottage cheese, egg, almond flour, garlic powder, and Italian seasoning to a food processor. Blend on high for 30-45 seconds until the mixture is completely smooth and resembles a thick batter.
  2. Crumple a sheet of parchment paper, flatten it out, and pour the batter into the center. Use the back of a spoon to spread it into a 7-inch (18cm) circle, leaving the edges slightly thicker.
  3. Transfer the parchment paper with the dough into the air fryer. Cook at 350°F (175°C) for 10-12 minutes until the crust is firm and the edges are golden-brown.
  4. Remove the crust from the air fryer. Spread the pizza sauce evenly, top with shredded mozzarella, and layer the pepperoni slices.
  5. Return to the air fryer and increase the heat to 400°F (200°C). Cook for 3-5 minutes until the cheese is bubbly and the pepperoni edges are perfectly crispy.
  6. Carefully remove the pizza. Garnish immediately with chopped parsley and grated parmesan. Let rest for 2 minutes before slicing to achieve the perfect cheesy pull.

Notes

Troubleshooting:
If your crust is soggy in the middle, your air fryer may run cool. Add 2-3 extra minutes to the initial par-bake.
For the best cheesy pull, always grate your own mozzarella from a block.
