Making the Pizza
- Add the cottage cheese, egg, almond flour, garlic powder, and Italian seasoning to a food processor. Blend on high for 30-45 seconds until the mixture is completely smooth and resembles a thick batter.
- Crumple a sheet of parchment paper, flatten it out, and pour the batter into the center. Use the back of a spoon to spread it into a 7-inch (18cm) circle, leaving the edges slightly thicker.
- Transfer the parchment paper with the dough into the air fryer. Cook at 350°F (175°C) for 10-12 minutes until the crust is firm and the edges are golden-brown.
- Remove the crust from the air fryer. Spread the pizza sauce evenly, top with shredded mozzarella, and layer the pepperoni slices.
- Return to the air fryer and increase the heat to 400°F (200°C). Cook for 3-5 minutes until the cheese is bubbly and the pepperoni edges are perfectly crispy.
- Carefully remove the pizza. Garnish immediately with chopped parsley and grated parmesan. Let rest for 2 minutes before slicing to achieve the perfect cheesy pull.

Troubleshooting:
If your crust is soggy in the middle, your air fryer may run cool. Add 2-3 extra minutes to the initial par-bake.
