Stuffed Onion Bombs Components
  • 2 large White Onions Peeled and outer layers separated
  • 1 lb Ground Beef (80/20) 450g
  • 6 slices Bacon Cooked and chopped crispy
  • 1 cup Sharp Cheddar Cheese 115g, cubed or thick shredded
  • 1 tbsp Cracked Black Pepper 6g
  • 1 tsp Kosher Salt 6g
  • 1/2 cup BBQ Sauce 120ml, glossy thick variety

  • 1 Outdoor Grill or Oven
  • 1 Mixing Bowl
  • 1 Basting Brush For the BBQ sauce glaze

Method
 

Preparation
  1. Cut the ends off onions and make a vertical slice to the center. Peel back the outer 2-3 large layers. Parboil for 3 minutes if layers are too stiff to bend.
  2. In a bowl, combine ground beef, crispy bacon, salt, and half the cracked black pepper. Mix gently to avoid toughening the meat.
Assembly & Cooking
  1. Form a beef ball around a cube of cheddar. Enclose the meatball between two onion layers, creating a complete sphere.
  2. Place on a 400°F (200°C) grill or oven. Cook for 30-40 minutes until onion is translucent and features dark char marks.
  3. Brush generously with BBQ sauce in the last 10 minutes. Top with remaining cracked black pepper before serving.

Notes

Use white onions for the best sweetness once grilled.
Ensure the beef reaches 160°F internally for safety.
