  • 1 cup (227g) Unsalted Butter softened
  • 1 cup (200g) Granulated Sugar plus extra for rolling
  • 1 large Egg room temperature
  • 2 ¼ cups (280g) All-Purpose Flour
  • 1 tsp (5g) Baking Soda
  • ½ tsp (3g) Salt
  • 1.5 tbsp (9g) Matcha Powder sifted
  • 3 tbsp (15g) Freeze-Dried Strawberry Powder
  • 1/4 cup (5g) Freeze-Dried Strawberry Bits crushed

  • 2 Baking Sheet Lined with parchment paper
  • 1 Electric Hand Mixer Or stand mixer

Method
 

Prepare the Dough
  1. Cream softened butter and 1 cup sugar until fluffy (2-3 minutes). Add the egg and mix well.
  2. Whisk flour, baking soda, and salt. Gradually add to the wet ingredients to form a base dough.
Color and Marble
  1. Divide dough in half. Mix matcha into one half for forest green dough. Mix strawberry powder and bits into the other half for pastel pink dough.
  2. Roll 1 tbsp of each color together gently to create a marble swirl pattern.
Bake
  1. Roll balls in granulated sugar and place on a baking sheet.
  2. Bake at 350°F (175°C) for 10-12 minutes until edges are set.

Notes

Sift your matcha to avoid clumps in the green dough.
Do not over-mix during the marbling stage to keep colors distinct.
