Strawberry Basil Chicken Ingredients
  • 1.5 lbs Chicken Breasts 680g, boneless and skinless
  • 1 cup Fresh Strawberries 150g, vibrant red and sliced
  • 1/2 cup Fresh Basil 15g, torn into pieces
  • 1 cup Mozzarella Cheese 115g, shredded or sliced
  • 1/2 cup Balsamic Vinegar 120ml
  • 2 tbsp Honey 30ml
  • 2 tbsp Olive Oil 30ml
  • 2 cloves Garlic Minced

Equipment

  • 1 Large Oven-Safe Skillet Cast iron or heavy stainless steel preferred.
  • 1 Whisk For the glaze.

Method
 

Preparation
  1. Pat chicken dry and season with salt and pepper. Pound to an even 3/4-inch thickness if needed.
  2. Heat oil in a skillet. Sear chicken for 5-6 minutes per side until golden with a glossy oily sheen.
  3. Add balsamic, honey, and garlic. Simmer for 3 minutes until glaze is thick and glossy.
  4. Top with mozzarella and broil for 2-3 minutes until bubbly and blistered.
  5. Top with sliced strawberries and torn basil. Drizzle with remaining pan sauce.

Notes

Use high-quality balsamic for a thicker glaze.
Tear basil by hand to avoid bruising and maintain green color.
