Ingredients
  

Golden Vanilla Cake
  • 2 cups (250g) All-Purpose Flour Structural base
  • 1 1/2 cups (300g) Granulated Sugar Sweetness and browning
  • 1 cup (240ml) Whole Milk Moisture
  • 1/2 cup (115g) Unsalted Butter Softened
  • 2 large Eggs Room temperature
  • 2 tsp (10ml) Vanilla Extract Pure extract
Pudding and Fruit Layers
  • 2 packages (3.4oz) Instant Banana Pudding Mix For the glossy yellow sheen
  • 3 cups (720ml) Cold Whole Milk To set pudding
  • 3 large Bananas Sliced
  • 2 cups (300g) Fresh Strawberries Sliced vertically
  • 8 oz (225g) Whipped Topping For irregular peaks

Equipment

  • 1 9x13 inch baking pan For baking the vanilla cake base.
  • 1 Electric Hand Mixer To cream butter and sugar.
  • 1 Large Whisk To achieve a glossy pudding sheen.

Method
 

Bake the Cake
  1. Cream butter and sugar, add eggs and vanilla, then alternate flour and milk. Bake at 350°F (175°C) for 25-30 minutes.
Prepare Filling
  1. Whisk pudding mix and cold milk for 2 minutes until glossy. Let set for 5 minutes.
Assemble
  1. Poke holes in cool cake. Pour half the pudding. Add fruit. Add remaining pudding and top with whipped cream.

Notes

For the best 'messy scoop' visual, use a large spoon rather than a knife.
Toss strawberries in a little syrup to maintain the wet, translucent surface look.
