Wrap Ingredients
  • 2 large Spinach flour tortillas 10-inch size
  • 1 lb Chicken breast 450g, sliced into strips
  • 1 cup Fresh baby spinach approx 30g
  • 1/2 cup Monterey Jack cheese shredded
  • 1/2 cup Red tomatoes diced
  • 1/4 cup Red onion thinly sliced
  • 1/2 cup Mayonnaise 120ml
  • 2 cloves Garlic minced
  • 1 tbsp Lemon juice 15ml

  • 1 Small mixing bowl For garlic sauce

Method
 

Preparation
  1. Season chicken strips with salt and pepper. Heat oil in a pan over medium-high heat. Sear for 3-4 minutes per side until golden-brown grill marks appear and chicken is cooked through.
  2. Whisk mayonnaise, minced garlic, and lemon juice in a small bowl. Let rest for 10 minutes.
  3. Warm the spinach tortilla. Layer garlic sauce, baby spinach, seared chicken, Monterey Jack, tomatoes, and onions in the center.
  4. Fold in the sides and roll tightly. Slice on a diagonal to serve immediately.

Notes

Warm the tortilla for 10 seconds to prevent cracking.
Let the chicken rest for 5 minutes before adding to the wrap for maximum juiciness.
