Ingredients

Main Ingredients
  • 1 lb Chicken Breasts sliced into thick strips
  • 12 oz Rigatoni Pasta dried
  • 3 tbsp Cajun Seasoning divided
  • 2 tbsp Honey
  • 4 tbsp Butter unsalted
  • 1.5 cups Heavy Cream
  • 0.5 cup Parmesan Cheese freshly grated
  • 1 tbsp Fresh Parsley chopped
  • 1 tsp Red Pepper Flakes dried

Equipment

  • 1 Large Skillet Heavy-bottomed preferred for searing
  • 1 Pasta Pot

Method

Prepare the Chicken
  1. Coat chicken strips in 2 tbsp Cajun seasoning. Sear in 1 tbsp butter and oil over medium-high heat until a charred crust forms (approx. 4 mins per side).
  2. Add 1 tbsp butter and 2 tbsp honey to the pan. Toss chicken for 60 seconds until a glossy glaze forms. Remove chicken and set aside.
Make the Sauce and Assemble
  1. In the same pan, add remaining butter, heavy cream, and Cajun seasoning. Simmer and whisk in parmesan cheese until a thick orange-red sauce forms.
  2. Toss al dente rigatoni into the sauce. Plate in bowls, top with chicken slices, parsley, and red pepper flakes.

Notes

Use freshly grated parmesan for a smooth sauce texture.
Reserve pasta water to thin the sauce if it becomes too thick.
