Ingredients

Main Ingredients
  • 1/2 cup Unsalted Butter 113g, melted in the dish
  • 1 cup All-Purpose Flour 125g
  • 1 cup Granulated Sugar 200g
  • 1.5 tsp Baking Powder 7g
  • 1 cup Whole Milk 240ml
  • 1 tsp Vanilla Extract
  • 3 large Ripe Bananas Sliced into circular rounds
  • 1 tbsp Powdered Sugar For dusting

Equipment

  • 6 White fluted ceramic ramekins Or one 9x9 baking dish
  • 1 Large Mixing Bowl

Method

Preparation
  1. Preheat oven to 350°F (175°C). Place butter in a white fluted ceramic ramekin and melt in the oven until bubbling.
  2. Whisk flour, sugar, and baking powder. Add milk and vanilla, whisking until just combined into a smooth batter.
Assembly & Baking
  1. Pour the batter into the center of the melted butter. Do not stir. Let the butter rise around the edges.
  2. Place seven circular banana slices in a ring on top of the batter in each ramekin.
  3. Bake for 45 minutes until the batter is golden-brown and pulled away from the edges to form caramelized crusts.
  4. Cool for 5 minutes, then apply a fine dusting of white powdered sugar before serving.

Notes

Do not stir the batter into the butter; this is key for the crust.
Use room temperature milk for the smoothest batter consistency.
