Southern Bacon Onion Tomato Pie with Crispy Bacon and Caramelized Onions

Main Ingredients
  • 1 Pie crust 9-inch, flaky golden-brown
  • 4 large Red tomatoes approx. 800g, sliced thick
  • 8 slices Bacon approx. 250g, cooked to crispy crumbles
  • 2 large Yellow onions approx. 500g, caramelized
  • 1.5 cups Yellow cheddar cheese 170g, shredded
  • 1 cup White mozzarella cheese 115g, shredded
  • 1 tsp Dried herb flakes 2g, oregano or basil
  • 1 handful Fresh parsley sprigs for garnish

Equipment

  • 1 White ceramic deep-dish baking vessel 9-inch diameter
  • 1 Large Skillet For bacon and onions

Method
 

Prepare the Crust
  1. Preheat oven to 375°F (190°C). Place the crust in the white ceramic dish and blind bake with weights for 15 minutes, then 5 minutes without weights until golden-brown.
Prepare Fillings
  1. Slice tomatoes thick and salt them on paper towels for 20 minutes to remove moisture.
  2. Fry bacon until crispy and dark brown; crumble. In the same fat, cook sliced onions until they are translucent and golden-brown caramelized onions.
Assemble and Bake
  1. Layer cheese, onions, bacon, and tomatoes. Repeat, ending with a thick layer of white and yellow cheese and bacon crumbles.
  2. Bake for 30-35 minutes until the top is bubbly and tomatoes are slightly dehydrated and puckered. Garnish with herb flakes and fresh parsley.

Notes

Always salt your tomatoes to prevent a soggy crust.
Use a mix of white mozzarella and yellow cheddar for the best flavor and color.
