Mix and Knead
- Whisk flour and salt in a large bowl. Add sourdough discard, warm water, and oil.
- Knead dough on a lightly floured surface for 3-5 minutes until smooth and elastic.

- Cover dough and let rest for 30 minutes to relax the gluten.
- Divide into 8 balls. Roll each into a 10-inch circle on a flour-dusted surface.
Cook
- Heat a dry cast iron skillet over medium-high. Cook each tortilla for 30-45 seconds until charred bubbles form.
- Stack cooked tortillas in a linen towel to keep them flexible and soft.
