  • 16 oz Rotini Pasta 450g, cooked al dente
  • 2 cups Sour Cream 480ml, full-fat preferred
  • 1/2 cup Mayonnaise 120ml
  • 2 tbsp Apple Cider Vinegar 30ml
  • 1 tbsp Granulated Sugar 15g
  • 1 large Green Bell Pepper diced
  • 1 large Red Bell Pepper diced
  • 1 cup Sweet Corn Kernels 165g, drained
  • 1/4 cup Fresh Parsley 10g, finely chopped

Method
 

Preparation
  1. Boil rotini pasta in salted water until al dente. Drain and rinse with cold water immediately.
  2. Whisk sour cream, mayo, vinegar, sugar, salt, and pepper in a large bowl until velvety and smooth.
  3. Fold the cooled pasta, diced peppers, and corn into the dressing until thoroughly coated.
  4. Refrigerate for 1 hour. Garnish with fresh parsley flakes before serving on a light wooden surface.

Notes

Keep 1/4 cup of dressing aside to refresh the salad if making 24 hours in advance.
Use full-fat sour cream for the most stable and thickest texture.
