  • 1/2 cup (120ml) Extra virgin olive oil high quality
  • 1/2 cup (30g) Fresh flat-leaf parsley finely chopped
  • 3-4 cloves Raw garlic minced
  • 2 tbsp (30ml) Red wine vinegar
  • 1 tsp (2g) Dried red chili flakes
  • 1/2 tsp (1g) Coarse ground black pepper
  • 1/2 tsp (3g) Coarse sea salt to taste

Method
 

Preparation
  1. Finely mince the roasted red peppers by hand until they are chunky and jam-like. Do not use a food processor.
  2. Finely chop the fresh parsley and mince the garlic cloves until they are tiny uniform bits.
  3. Place minced peppers, parsley, and garlic into a rustic ceramic bowl. Add chili flakes, salt, and black pepper.
  4. Pour in the red wine vinegar and golden olive oil. Stir with a silver spoon until the ingredients are submerged in a glistening sheen.
  5. Allow the sauce to sit at room temperature for at least 15-30 minutes before serving to let flavors meld.
