Make the Sauce
- In a small bowl, whisk together the mayonnaise, mustard, ketchup, relish, and smoked paprika until smooth and bright orange.
Cook the Tacos
- Divide ground beef into 8 balls (approx 2oz each). Do not overwork.
- Place beef ball on a hot skillet, top with a tortilla, and smash down firmly with a press for 10 seconds.
- Cook for 2 minutes until edges are charred. Flip so the tortilla is on the pan.
- Add cheddar cheese to the beef and cover with a lid for 30 seconds until gooey.
Assemble
- Top with lettuce, onions, pickles, orange sauce, and sesame seeds.
