Ingredients
  

Main Ingredients
  • 1 lb (450g) Ground Beef 80/20 fat content preferred
  • 8 small Flour Tortillas approx 6-inch
  • 8 slices Orange Cheddar Cheese or 1.5 cups shredded
  • 1 tsp (5g) Salt to taste
  • 1/2 cup (120ml) Mayonnaise
  • 2 tbsp (30ml) Yellow Mustard
  • 1 tbsp (15ml) Ketchup
  • 1 tbsp (15ml) Sweet Pickle Relish
  • 1 tsp (5g) Smoked Paprika for orange color
  • 2 cups (150g) Iceberg Lettuce shredded
  • 1/2 cup (75g) White Onion finely diced
  • 16 slices Crinkle-Cut Pickles
  • 1 tbsp (9g) White Sesame Seeds

Equipment

  • 1 Cast Iron Skillet or Griddle
  • 1 Heavy Burger Press or Spatula

Method
 

Make the Sauce
  1. In a small bowl, whisk together the mayonnaise, mustard, ketchup, relish, and smoked paprika until smooth and bright orange.
Cook the Tacos
  1. Divide ground beef into 8 balls (approx 2oz each). Do not overwork.
  2. Place beef ball on a hot skillet, top with a tortilla, and smash down firmly with a press for 10 seconds.
  3. Cook for 2 minutes until edges are charred. Flip so the tortilla is on the pan.
  4. Add cheddar cheese to the beef and cover with a lid for 30 seconds until gooey.
Assemble
  1. Top with lettuce, onions, pickles, orange sauce, and sesame seeds.

Notes

Keep the beef cold before smashing for the best crust.
Use a heavy press to ensure the beef is as thin as possible.
