Slow Cooker Honey Garlic Chicken Ingredients
  • 2 lbs boneless, skinless chicken thighs 900g
  • 1 lb red baby potatoes 450g, halved
  • 3 large carrots 250g, sliced into thick coins
  • 8 oz whole green beans 225g, trimmed
  • 1/2 cup honey 120ml, raw or liquid
  • 1/4 cup soy sauce 60ml, low sodium
  • 5 cloves garlic minced
  • 1 tbsp cornstarch 15g, for thickening
  • 1 tsp sesame seeds white
  • 1 tbsp fresh parsley chopped

Equipment

  • 1 Slow Cooker 6-quart size recommended
  • 1 Large Skillet For searing the chicken

Method
 

Preparation
  1. In a bowl, combine honey, soy sauce, and minced garlic until the sauce is glossy and dark amber.
  2. Season chicken thighs and sear in a hot skillet for 2 minutes per side to lock in juices.
Cooking Process
  1. Place halved red baby potatoes and thick-cut carrot coins at the bottom of the slow cooker insert.
  2. Place seared chicken on top of vegetables and pour over the honey garlic mixture.
  3. Cover and cook on LOW for 4-5 hours until chicken is tender and sauce is viscous.
  4. 30 minutes before serving, add the whole green beans to keep them vibrant green.
Finishing
  1. Stir in cornstarch slurry if desired. Garnish with white sesame seeds and chopped parsley before serving.

Notes

Add green beans only at the very end to keep them vibrant green.
Use chicken thighs instead of breasts for the juiciest results in the slow cooker.
