Preparation
- Preheat your oven to 400°F (200°C). In a small bowl, whisk olive oil, lemon juice, garlic, and dried thyme to create the glaze.
- Toss halved baby yellow potatoes with half the glaze and a teaspoon of smoked paprika. Place cut-side down on the stoneware pan.
- Rub chicken breasts with the remaining smoked paprika and glaze. Nestle them among the potatoes on the pan.
- Roast for 15-18 minutes until chicken is starting to brown and potatoes are softening.
- Scatter green beans onto the pan. Roast for another 8-12 minutes until beans are blistered and chicken reaches 165°F (74°C).
