  • 3 large Boneless Skinless Chicken Breasts Approx. 1.5 lbs (680g)
  • 1 lb (450g) Baby Yellow Potatoes Halved
  • 12 oz (340g) Fresh Green Beans Trimmed
  • 2 tbsp (30ml) Lemon Juice Freshly squeezed
  • 3 tbsp (45ml) Olive Oil Extra virgin
  • 4 cloves Garlic Minced
  • 1 tsp (5g) Dried Thyme Flakes
  • 2 tsp (10g) Smoked Paprika

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). In a small bowl, whisk olive oil, lemon juice, garlic, and dried thyme to create the glaze.
  2. Toss halved baby yellow potatoes with half the glaze and a teaspoon of smoked paprika. Place cut-side down on the stoneware pan.
  3. Rub chicken breasts with the remaining smoked paprika and glaze. Nestle them among the potatoes on the pan.
  4. Roast for 15-18 minutes until chicken is starting to brown and potatoes are softening.
  5. Scatter green beans onto the pan. Roast for another 8-12 minutes until beans are blistered and chicken reaches 165°F (74°C).

Notes

Ensure chicken is patted dry for the best browning.
Use baby yellow potatoes specifically for the creamiest texture and best charred edges.
