Ingredients
  

Graham Cracker Crust
  • 1 cup (120g) Graham Cracker Crumbs
  • 3 tbsp (42g) Unsalted Butter melted
  • 1 tbsp (12g) Granulated Sugar
Cheesecake Filling
  • 8 oz (226g) Cream Cheese softened, full-fat
  • 1/4 cup (50g) Granulated Sugar
  • 1 large Egg room temperature
  • 1 tsp (5ml) Vanilla Extract
  • 1/4 cup (60ml) Sour Cream
Decorations
  • 12-15 Fresh Strawberries hulls removed
  • 1 cup (240ml) Heavy Whipping Cream cold
  • 2 tbsp (15g) Powdered Sugar

Equipment

  • 1 Mini Muffin Tin
  • 1 Piping Bag with Star Tip Used for the whipped cream brim and pom-pom.

Method
 

Crust Prep
  1. Combine graham cracker crumbs, melted butter, and sugar. Press into a lined mini muffin tin.
  2. Bake at 325°F (163°C) for 5 minutes. Let cool.
Filling and Baking
  1. Beat softened cream cheese and sugar until smooth. Add egg, vanilla, and sour cream; mix on low until just combined.
  2. Fill liners 3/4 full. Bake for 15-18 minutes until edges are set. Chill for 2 hours.
Decoration
  1. Place a whole strawberry, pointed-side up, on each chilled cheesecake.
  2. Pipe a ring of whipped cream around the strawberry base and a small dollop on the tip.

Notes

Ensure strawberries are completely dry before placing them on the cheesecake to prevent the whipped cream from sliding.
Use a star tip for the whipped cream to get a professional, textured 'fur' look for the hat.
