Cowboy Butter Ingredients
  • 1 cup Unsalted Butter 226g, high-quality European style
  • 1 head Garlic Whole head for roasting
  • 1 tbsp Olive Oil 15ml, for roasting garlic
  • 1/4 cup Fresh Parsley 15g, finely chopped
  • 1 tbsp Dijon Mustard 15ml
  • 1 tbsp Lemon Juice 15ml, fresh
  • 1 tsp Red Pepper Flakes 2g
  • 1 tsp Sea Salt Adjust to taste

Equipment

  • 1 Small saucepan
  • 1 Ceramic Ramekin For serving
  • 1 Aluminum foil For roasting garlic

Method
 

Roast the Garlic
  1. Preheat oven to 400°F (200°C). Slice the top off the garlic head, drizzle with olive oil, and wrap in foil.
  2. Roast for 40-45 minutes until cloves are soft, golden, and blistered.
Assemble the Butter
  1. In a small saucepan over low heat, melt the butter until it has a translucent oily sheen.
  2. Squeeze the roasted garlic cloves into the butter. Whisk in parsley, Dijon, lemon juice, and red pepper flakes.
  3. Pour into a ceramic ramekin and serve immediately with crusty sourdough bread.

Notes

For the best visual, leave some garlic cloves whole but smashed.
Use fresh parsley for that vibrant green fibrous texture.
