Prepare the Queso Sauce
- Melt butter in a saucepan over medium heat; whisk in flour for 2 minutes.
- Slowly whisk in milk and simmer until thickened. Stir in chiles and 1 cup of cheese until smooth.
Assemble and Bake
- Mix chicken with a splash of sauce. Fill and roll tortillas tightly, placing them in the baking dish.
- Pour remaining queso over the center and top with the rest of the Monterey Jack. Bake at 375°F (190°C) for 25 minutes until browned bubbles appear.
- Top with fresh cilantro, scallions, and a dusting of red chili powder before serving.
Notes
