  • 2 cups Confectioners’ sugar (powdered sugar) Sifted
  • 2-3 tablespoons Whole milk Whisked, room temperature
  • 1 teaspoon Vanilla bean paste For visible vanilla specks
  • 1 pinch Salt Fine sea salt
  • 1 tablespoon Unsalted butter Melted (optional for extra shine)

Method
 

Preparation
  1. Sift 2 cups (240g) of powdered sugar into a clear glass bowl to remove all lumps.
  2. Add 2 tablespoons (30ml) of whisked milk and the vanilla bean paste to the bowl.
  3. Whisk continuously until the mixture becomes a smooth, glossy white creamy liquid.
  4. Lift a silver spoon to check for a thick, opaque ribbon that holds its shape for 2 seconds.
  5. Add more milk by the teaspoon if too thick, or more sugar by the tablespoon if too thin.

Notes

Always sift your sugar to avoid visible lumps in the glossy finish.
Cover the bowl with a damp cloth to prevent a crust from forming while you work.
