Ingredients
  

Potato Cheese Stick Ingredients
  • 2 lbs Yukon Gold Potatoes 900g, peeled and cubed
  • 1/2 cup Cornstarch 60g
  • 1 tbsp Dried Parsley Flakes 4g
  • 2 tsp Cracked Black Pepper 4g
  • 16 oz Low-Moisture Mozzarella Cheese 450g, cut into sticks
  • 2 cups Panko Breadcrumbs 120g
  • 2 Large Eggs Beaten
  • 1/2 cup All-Purpose Flour 60g
  • 3 cups Vegetable Oil For frying

Equipment

  • 1 Large pot For boiling potatoes
  • 1 Potato Masher
  • 1 Deep Fryer or Heavy-Bottomed Pot For frying

Method
 

Prepare the Potatoes
  1. Boil potato cubes in salted water for 15-20 minutes until tender. Drain and steam dry.
  2. Mash potatoes until smooth. Mix in cornstarch, parsley, and black pepper until fine specks are evenly distributed.
Assemble and Fry
  1. Flatten 2 tbsp of potato dough, place a mozzarella stick in the center, and seal completely.
  2. Dredge in flour, dip in egg, and coat in Panko breadcrumbs for a textured exterior.
  3. Fry in 350°F (175°C) oil for 3-4 minutes until deep amber hue is achieved. Serve with tomato sauce.

Notes

Freeze breaded sticks for 20 mins before frying to prevent cheese from bursting.
Use Yukon Gold potatoes for the smoothest internal texture.
