- In a small bowl, thoroughly mix the softened butter, minced garlic, and Italian seasoning.
- Spread the garlic butter on one side of each slice of bread. Flip the bread over. On the unbuttered sides, spread the marinara sauce. Layer one slice with provolone cheese, shredded mozzarella, and pepperoni slices. Place the second slice of bread on top, butter-side facing up.
- Heat a non-stick skillet over medium-low heat. Place the sandwich in the skillet and cook for 4-5 minutes on each side, until the bread is golden brown and crispy and the cheese is completely melted. Press down gently with a spatula while cooking.
- Remove from skillet, slice in half, and serve immediately with extra marinara sauce for dipping.

For the best melt: shred your own mozzarella cheese from a block.
