Ingredients
  

  • 2 slices thick-cut bread sourdough or Texas toast recommended
  • 2 tbsp unsalted butter softened
  • 1 clove garlic minced
  • 1/2 tsp Italian seasoning
  • 2 tbsp marinara sauce plus more for dipping
  • 1/2 cup shredded low-moisture mozzarella cheese
  • 1 slice provolone cheese
  • 8-10 slices pepperoni

  • 1 Skillet or non-stick pan
  • 1 Spatula

Method
 

  1. In a small bowl, thoroughly mix the softened butter, minced garlic, and Italian seasoning.
  2. Spread the garlic butter on one side of each slice of bread. Flip the bread over. On the unbuttered sides, spread the marinara sauce. Layer one slice with provolone cheese, shredded mozzarella, and pepperoni slices. Place the second slice of bread on top, butter-side facing up.
  3. Heat a non-stick skillet over medium-low heat. Place the sandwich in the skillet and cook for 4-5 minutes on each side, until the bread is golden brown and crispy and the cheese is completely melted. Press down gently with a spatula while cooking.
  4. Remove from skillet, slice in half, and serve immediately with extra marinara sauce for dipping.

Notes

For the best melt: shred your own mozzarella cheese from a block.
Keep it crispy: don't add too much sauce inside the sandwich; use extra for dipping instead.
Cook low and slow: this ensures the cheese melts perfectly without burning the bread.
