- Season chicken and sear skin-side down in a heavy dish until deeply browned with char marks (6-8 mins). Flip for 2 mins, then remove.
- Blend cilantro, spinach, and 1/2 cup chicken broth until vibrant green and smooth.
- Sauté onion, garlic, and aji amarillo paste. Add rice and toast for 3 minutes until edges are translucent.
- Add green puree, beer, broth, and carrots. Return chicken to the pan. Cover and simmer on low for 20-25 mins.
