  • 1 cup (240ml) Warm Water 110°F/43°C
  • 2.25 tsp (7g) Active Dry Yeast 1 packet
  • 1 tbsp (12g) Granulated Sugar
  • 3 cups (360g) All-Purpose Flour Divided
  • 2 tbsp (30ml) Olive Oil
  • 1 tsp (6g) Salt
  • 2 cups (226g) Mozzarella Cheese Shredded, whole milk preferred
  • 6 oz (170g) Pepperoni Slices Thinly sliced
  • 4 tbsp (56g) Unsalted Butter Melted
  • 1 tsp Dried Parsley
  • 1 tsp Dried Oregano

Equipment

  • 1 Baking Sheet Lined with parchment paper
  • 1 Rolling Pin
  • 1 Pastry Brush For the butter glaze

Method
 

Dough Preparation
  1. Combine warm water, sugar, and yeast in a bowl. Let sit for 5-10 minutes until frothy.
  2. Add oil, salt, and flour. Knead for 5-7 minutes until a smooth, elastic dough forms.
  3. Place dough in a greased bowl, cover, and let rise for 1 hour in a warm spot.
Assembly and Baking
  1. Roll dough into a 12x18 inch rectangle on a floured surface.
  2. Top with mozzarella and pepperoni. Roll tightly into a log and slice into 12 rolls.
  3. Place rolls on a baking sheet and let rest for 15 minutes while preheating oven to 400°F (200°C).
  4. Bake for 18-22 minutes until golden brown with a bubbly cheese center.
  5. Brush hot rolls with melted butter mixed with parsley and oregano.

Notes

Use dental floss for cleaner cuts through the dough log.
Ensure the oven is fully preheated to achieve charred spots.
