  • 1 cup Parmesan Cheese grated (100g)
  • 1/2 cup Panko Breadcrumbs 60g
  • 2 heads Broccoli cut into florets (500g)
  • 2 large Red Bell Peppers sliced into strips
  • 3 tbsp Extra Virgin Olive Oil divided (45ml)
  • 1 tsp Garlic Powder 5g
  • 1 tsp Dried Oregano 2g
  • 1/4 cup Fresh Parsley finely chopped

Method
 

Preparation
  1. Preheat oven to 425°F (220°C). Lightly grease a large dark metal baking sheet.
  2. Toss broccoli florets and red pepper slices on the pan with 2 tbsp olive oil, salt, and pepper. Spread in a single layer.
Cooking
  1. Mix parmesan, panko, and spices. Dredge chicken pieces in the mixture, pressing to adhere, and place on the sheet pan.
  2. Bake for 18-22 minutes until chicken reaches 165°F and broccoli tips are charred.
  3. Optional: Broil for 1-2 minutes for extra color. Garnish with parsley and extra cheese.

Notes

Use a meat thermometer to ensure chicken is juicy, not overcooked.
Don't overcrowd the pan or the broccoli won't char.
