  • 2 cups (120g) Panko Breadcrumbs Japanese style
  • 1/2 cup (60g) All-Purpose Flour
  • 2 large Eggs Beaten
  • 1 tsp Dried Thyme
  • 1 tsp Dried Oregano
  • 1 tsp Cracked Black Pepper Coarse
  • 2 tbsp Fresh Parsley Finely chopped for garnish
  • 1/2 cup Ranch Dressing For dipping

  • 1 Baking Sheet Large
  • 1 Wire Cooling Rack To fit inside baking sheet
  • 3 Shallow Bowls For dredging station

Preparation
  1. Preheat your oven to 425°F (220°C) and set a wire rack over a foil-lined baking sheet.
  2. Pat the chicken drumsticks thoroughly dry with paper towels to ensure a crispy crust.
Dredging
  1. Prepare three bowls with flour, beaten eggs, and the panko-herb-pepper mixture.
  2. Dip chicken in flour, then egg, then press firmly into the panko mixture until heavily coated.
Baking
  1. Place chicken on the rack and spray lightly with oil for a golden-brown finish.
  2. Bake for 30-35 minutes until the internal temperature reaches 165°F and the crust is crispy.

Notes

Use a wire rack to prevent soggy bottoms.
Press the panko firmly into the chicken for maximum adhesion.
