Preparation
- Preheat your oven to 425°F (220°C). Pat the chicken drumsticks extremely dry using paper towels to ensure the skin can blister properly.
- In a large bowl, toss the drumsticks with oil. In a small bowl, mix smoked paprika, thyme, sea salt, and black pepper. Coat the chicken thoroughly in the spice rub.
Baking
- Place a wire rack on a baking sheet. Arrange the drumsticks on the rack, ensuring they do not touch each other.
- Bake for 35-45 minutes until the skin is deeply browned and blistered. The internal temperature should reach 185°F (85°C) for maximum succulence.
- Remove from oven and let rest for 5 minutes. Scatter finely chopped fresh parsley over the top and serve.
