Preparation
- Heat oil in a large pot over medium-high heat. Add sausage rounds and sear until edges are dark brown and crispy. Remove with a slotted spoon.
- In the same pot, add diced red, yellow, and green bell peppers. Sauté until tender, about 5 minutes. Stir in garlic and cook for 30 seconds.
- Add rinsed rice to the pot. Stir for 2 minutes to toast the grains and coat them in the spices and sausage oil for that reddish-brown tint.
- Stir in broth, black beans, and the seared sausage. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes.
- Remove from heat and let sit covered for 5 minutes. Fluff with a fork and garnish with freshly chopped parsley.
