  • 4 slices Roasted Turkey Breast Thinly sliced

  • 0.5 cups (64g) Cornstarch Key for the tempura crunch
  • 1.25 cups (300ml) Club Soda Must be ice-cold
  • 1 tsp (5g) Baking Powder

  • 0.5 cups (120ml) Raspberry Preserves For dipping

Equipment

  • 1 Wire Cooling Rack Prevents sogginess after frying

Method
 

Assembly
  1. Build the sandwich using three slices of bread per serving. Layer bread, cheese, ham, bread, cheese, turkey, and bread. Press down firmly to compress.
  2. Insert toothpicks into the four corners of the sandwich to keep the layers from sliding during the dipping process.
Frying
  1. Whisk flour, cornstarch, and baking powder. Gradually add cold club soda until a thin batter forms. Do not overmix.
  2. Dip the sandwich into the batter and fry in 350°F (175°C) oil for 2-3 minutes per side until deep golden-brown.
Serving
  1. Drain on a wire rack, remove toothpicks, slice into triangles, and dust with powdered sugar. Serve with raspberry jam.

Notes

Use ice-cold club soda for the lightest batter.
