  • 1.5 lbs Lean Ground Beef 80/20 blend for better flavor
  • 1 packet Taco Seasoning 28g
  • 9 oz Corn Chips Fritos or similar triangular chips
  • 1 cup Sour Cream 240ml
  • 1 can Cream of Mushroom Soup 300ml
  • 2 cups Sharp Cheddar Cheese 226g, freshly shredded
  • 1/4 cup Green Chilies 60ml, canned

Equipment

  • 1 9x13 inch baking dish Ceramic or glass works best for even browning.
  • 1 Large Skillet For browning the beef.

Method
 

Preparation
  1. Brown the ground beef in a large skillet over medium-high heat until fully cooked. Do not drain all the fat.
  2. Add taco seasoning and a splash of water. Simmer for 5 minutes until the beef is glossy and seasoned.
  3. In a bowl, whisk together the sour cream, cream of mushroom soup, and green chilies.
  4. In a 9x13 baking dish, layer half the corn chips, followed by the beef mixture, then the cream sauce.
  5. Top with cheddar cheese. Bake at 350°F (175°C) for 20 minutes. Broil for 2 minutes at the end to blister the cheese.

Notes

Use freshly grated cheese for the best melt and blister.
Rest the dish for 10 minutes after baking to ensure perfect sauce drips.
