  • 3 tbsp Avocado oil or olive oil 45ml, high smoke point oil preferred
  • 1 tbsp Ancho chili powder 7g, builds the authentic smoky red rub base
  • 1 tsp Smoked paprika 2g, adds vibrant color and wood-smoke aroma
  • 1 tsp Ground cumin 2g, infuses foundational earthy warmth
  • 1 tsp Garlic powder 3g, evenly distributes savory aromatic notes
  • 1 tsp Onion powder 3g, complementary sweet and savory element
  • 1/2 tsp Dried oregano (preferably Mexican) 0.5g, provides a subtle citrusy, herbal lift
  • 1 tsp Sea salt 6g, absolutely critical for flavor extraction
  • 1/2 tsp Coarse black pepper 1g, sharp flavor balance

Method
 

Preparation & Seasoning
  1. Preheat your oven to 425°F (218°C). Place your 10-inch black cast-iron skillet inside the oven during preheating to heat the surface completely.
  2. Wash, peel, and cut the potatoes into uniform 1-inch (2.5cm) cubes. Dry them thoroughly using clean paper towels to eliminate excess moisture.
  3. In a large bowl, whisk together ancho chili powder, smoked paprika, cumin, garlic powder, onion powder, oregano, salt, black pepper, and cayenne. Drizzle the oil over the dried potatoes, then toss thoroughly with the spice mixture until every cube turns deep red.
Roasting
  1. Carefully remove the hot skillet from the oven. Pour the seasoned potato cubes into it immediately, spreading them into a flat, single layer.
  2. Return the skillet to the oven and roast at 425°F (218°C) for 30 to 35 minutes, flipping with a thin metal spatula at the 15-minute mark until dark brown caramelized edges form.
  3. Remove from oven, let rest for 2 minutes, then garnish heavily with coarsely chopped green cilantro. Serve immediately alongside a small bowl of smooth sour cream dip.

Notes

Do not crowd the skillet; use two pans if doubling the recipe to avoid steaming.
