Ingredients
  

  • 1 Large Flour Tortilla
  • 1 cup Fresh Spinach roughly chopped
  • 1/4 cup Feta Cheese crumbled
  • 1/4 cup Mozzarella Cheese shredded
  • 2 tbsp Sun-Dried Tomatoes in oil drained and chopped
  • 1 tbsp Kalamata Olives finely chopped
  • 1 tbsp Red Onion thinly sliced
  • 1 tsp Olive Oil or Butter for cooking

  • 1 Skillet or Pan
  • 1 Spatula

Method
 

  1. Lay a tortilla flat. On one half, layer the mozzarella, spinach, feta, sun-dried tomatoes, Kalamata olives, and red onion. Fold the other half of the tortilla over the fillings.
  2. Heat a skillet over medium heat and add olive oil or butter. Cook the quesadilla for 2-3 minutes per side, until the tortilla is golden brown and the cheese is fully melted.
  3. Remove from the pan, let rest for a minute, then slice into wedges and serve immediately.

Notes

Tip 1: Use medium heat to ensure the cheese melts completely without burning the tortilla.
Tip 2: For extra protein, add 1/4 cup of cooked, shredded chicken along with the other fillings.
Tip 3: Serve with a side of tzatziki or hummus for the ultimate Mediterranean experience.
