Mediterranean Pasta Salad with Zesty Lemon-Herb Vinaigrette

Ingredients
  

Salad Components
  • 1 lb Rotini Pasta 450g, cooked al dente
  • 2 cups Cherry Tomatoes 300g, halved
  • 1 large English Cucumber 300g, sliced into half-moons
  • 1/2 medium Red Onion 100g, thinly sliced into crescents
  • 1 cup Kalamata Olives 150g, pitted
  • 6 oz Feta Cheese 170g, large crumbles
  • 1/4 cup Fresh Parsley 10g, finely chopped
Lemon-Herb Vinaigrette
  • 1/2 cup Extra Virgin Olive Oil 120ml
  • 1/4 cup Fresh Lemon Juice 60ml
  • 1 tsp Dried Oregano 2g
  • Salt and Pepper To taste

  • 1 Large pot For boiling pasta
  • 1 White ceramic bowl For serving and mixing
  • 1 Whisk For the vinaigrette

Method
 

Preparation
  1. Boil the rotini in salted water until al dente. Drain and rinse with cold water.
  2. Whisk together olive oil, lemon juice, dried oregano, salt, and pepper until combined.
  3. In a large bowl, combine pasta, tomatoes, cucumbers, red onions, and olives. Toss with the dressing.
  4. Gently fold in the feta cheese and fresh parsley. Sprinkle with extra oregano and serve.

Notes

Use a block of feta and crumble it yourself for the best texture.
Rinse the cooked pasta to keep the spirals from sticking together.
