Ingredients
  

Main Ingredients
  • 1.5 lbs chicken breast boneless skinless, cut into bite-sized pieces
  • 2 tbsp olive oil (30ml)
  • 8 count flour tortillas 6-inch size
  • 1 cup tzatziki sauce (240ml) creamy white
  • 1 cup cherry tomatoes (150g) halved
  • 1 cup cucumber (150g) diced fresh green
  • 0.5 count red onion thinly sliced
  • 0.5 cup feta cheese (75g) crumbled white
  • 0.25 cup fresh parsley (15g) finely chopped

Equipment

  • 1 Cast Iron Skillet For searing the chicken.
  • 1 Mixing Bowl For seasoning chicken.

Method
 

Prepare the Chicken
  1. Toss the chicken pieces with olive oil, oregano, garlic powder, salt, and pepper until evenly coated.
  2. Heat a skillet over medium-high heat. Sear the chicken for 5-7 minutes until golden-brown and cooked through.
Assembly
  1. Char the flour tortillas over an open gas flame or in a dry pan until black spots appear.
  2. Layer the charred tortillas with seared chicken, a dollop of tzatziki, cucumbers, tomatoes, and onions. Finish with feta and parsley.

Notes

Use a cast iron skillet for the best golden sear on the chicken.
Keep tortillas wrapped in a towel to stay soft after charring.
