Main Ingredients
  • 1 lb Ground Chicken 454g
  • 1/2 cup Feta Cheese 75g, crumbled
  • 1/4 cup Fresh Parsley 15g, finely chopped
  • 1 tsp Dried Oregano 2g
  • 2 cloves Garlic minced
  • 2 tbsp Extra Virgin Olive Oil 30ml, for searing
Platter Sides
  • 1/2 cup Tzatziki Sauce 120ml, thick and creamy
  • 1/2 cup Cucumber 75g, sliced
  • 1/2 cup Cherry Tomatoes 75g, halved
  • 1/4 red onion Red Onion thinly sliced
  • 1 wedge Lemon for garnish
  • 1 sprig Fresh Dill for garnish

  • 1 Large Skillet or Cast Iron Pan Used for searing the meatballs.
  • 1 Mixing Bowl

Method
 

Prepare the Meatballs
  1. In a large bowl, combine ground chicken, crumbled feta, parsley, oregano, and minced garlic. Mix gently until just combined.
  2. Roll the mixture into 1.5-inch meatballs, making approximately 12-14 pieces.
Cook and Serve
  1. Heat olive oil in a skillet over medium-high heat. Sear meatballs for 3-4 minutes per side until golden brown and the internal temperature reaches 165°F (74°C).
  2. Arrange the seared meatballs in a bowl with tzatziki, cucumber, tomatoes, and red onion. Garnish with dill, a lemon wedge, and a final drizzle of olive oil.

Notes

Don't overmix the chicken to keep them tender.
Use a high-heat oil like olive oil for the best golden-brown sear.
