Mediterranean Salmon Ingredients
  • 4 fillets Salmon approx 6 oz / 170g each
  • 2 cups Baby Spinach 60g, fresh
  • 1/3 cup Sun-dried Tomatoes 50g, chopped, oil-packed
  • 1/2 cup Feta Cheese 75g, large crumbles
  • 1 tsp Dried Oregano 5ml
  • 2 tbsp Fresh Dill 30ml, chopped
  • 2 tbsp Olive Oil 30ml
  • 1 tbsp Lemon Juice 15ml

Equipment

  • 1 White Ceramic Baking Dish Large enough to fit 4 fillets
  • 1 Meat Thermometer To check for 145°F internal temp

Method
 

Preparation
  1. Preheat oven to 400°F (200°C). Pat salmon fillets dry and place in a white ceramic baking dish.
  2. Drizzle salmon with olive oil and lemon juice. Season with salt, pepper, and dried oregano.
Assembly and Baking
  1. Layer fresh spinach, sun-dried tomatoes, and feta cheese crumbles evenly over each fillet.
  2. Bake for 12-15 minutes until salmon is flaky and reaches 145°F. Garnish with fresh dill.

Notes

Ensure you pat the salmon dry for the best caramelized edges.
Use high-quality feta in brine for a softer, creamier texture.
