Main Ingredients
  • 1 lb Chicken Breast 454g, sliced into thick cutlets
  • 1 lb Penne Pasta 454g, cooked al dente
  • 2 tbsp Oil Reserved from sun-dried tomato jar
  • 1/2 cup Sun-dried Tomatoes 60g, chopped
  • 3 cloves Garlic minced
  • 1 cup Heavy Cream 240ml
  • 1/2 cup Parmesan Cheese 50g, freshly grated
  • 1 tsp Red Pepper Flakes 2g
  • 1/4 cup Fresh Basil ribboned

Equipment

  • 1 Large Skillet Preferably stainless steel or cast iron for searing.
  • 1 Pasta Pot Large pot for boiling penne.

Method
 

Prepare the Dish
  1. Heat oil in skillet. Season and sear chicken for 4-5 minutes per side until golden-brown and crispy. Slice into strips.
  2. Boil penne in salted water until al dente. Reserve 1 cup of pasta water before draining.
  3. Sauté garlic and sun-dried tomatoes. Stir in heavy cream, parmesan, and red pepper flakes until glossy and pale-orange.
  4. Toss penne into the sauce with splashes of pasta water. Top with chicken, basil, and more parmesan.

Notes

Always use freshly grated parmesan for the best melt.
Don't forget to reserve pasta water; it's the secret to a glossy sauce.
