  • 1.5 lbs Chicken Breasts Boneless, skinless (680g)
  • 1/4 cup Lime Juice Freshly squeezed (60ml)
  • 2 tbsp Honey For glaze (30ml)
  • 2 tbsp Soy Sauce For umami (30ml)
  • 1 tbsp Vegetable Oil Plus extra for grates (15ml)
  • 3 cloves Garlic Minced
  • 1/4 cup Cilantro Chopped (10g)
  • 2 whole Limes Cut into wedges

  • 1 Outdoor Grill Gas or charcoal
  • 1 Meat Thermometer To ensure 165°F internal temp

Method
 

Preparation
  1. Whisk lime juice, honey, soy sauce, oil, garlic, and half the cilantro. Coat chicken and marinate for 30 minutes to 4 hours.
  2. Preheat grill to medium-high (400°F/200°C) and oil the grates to prevent sticking.
  3. Grill chicken for 5-7 minutes per side until charred black marks appear and internal temp is 165°F.
  4. Let rest for 5 minutes. Serve with fresh cilantro and charred lime wedges.

Notes

Do not over-marinate past 6 hours as the lime juice can affect the texture.
Always rest the meat to keep it juicy.
