Ingredients
  

Strawberry Filling
  • 4 cups (600g) Fresh strawberries halved
  • 1/2 cup (100g) Erythritol granulated
  • 1 tbsp (15ml) Lemon juice
  • 1/4 tsp (1.25ml) Xanthan gum for thickening
Cream Cheese Swirl
  • 4 oz (115g) Cream cheese softened
  • 1 tbsp Erythritol
Cobbler Topping
  • 2 cups (200g) Almond flour
  • 1/4 cup (30g) Coconut flour
  • 1/2 cup (115g) Unsalted butter cold and cubed

Equipment

  • 1 White Ceramic Baking Dish
  • 1 Pastry cutter Or use fingers to crumble butter

Method
 

Prepare Filling
  1. Toss strawberries with sweetener and lemon juice. Let sit for 15 mins until juices release.
  2. Stir in xanthan gum to create a thick, bubbly strawberry sauce.
Assemble Topping
  1. Mix flours and cold butter until visible buttery dough peaks form.
Bake
  1. Pour berries into dish, dollop cream cheese, and scatter crumbly topping.
  2. Bake at 375°F (190°C) for 35 minutes until golden brown and bubbly.

Notes

Use cold butter for the best crumbly texture.
Let the cobbler rest for 10 minutes before serving to allow the sauce to thicken.
