  • 1.5 cups Super-Fine Almond Flour 168g
  • 5 tbsp Psyllium Husk Powder 45g
  • 2 tsp Baking Powder 10g
  • 1 tsp Sea Salt 6g
  • 3 large Egg Whites approx 90ml
  • 1 tsp Apple Cider Vinegar 5ml
  • 1 cup Boiling Water 240ml
  • 1 large Egg For egg wash
  • 1 tbsp White and Black Sesame Seeds Mixed

Equipment

  • 1 Large Baking Sheet Lined with parchment paper
  • 1 Black Wire Cooling Rack Essential for cooling without sogginess
  • 1 Hand Mixer

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Whisk together almond flour, psyllium husk powder, baking powder, and salt in a large bowl.
Making the Dough
  1. Add egg whites and apple cider vinegar to the dry mixture and begin to combine.
  2. Pour in the boiling water and mix on high speed for 30-60 seconds until a thick dough forms.
Baking
  1. Form into 6 balls, flatten slightly on the sheet, and brush with egg wash and sesame seeds.
  2. Bake for 45-50 minutes until golden-brown. Cool completely on a black wire rack.

Notes

Use a kitchen scale for the psyllium husk for best results.
Ensure the water is truly boiling to activate the psyllium correctly.
