Ingredients
  

Main Ingredients
  • 4 cups Green Cabbage finely shredded (approx. 350g)
  • 2 cups Purple Cabbage finely shredded (approx. 175g)
  • 1 cup Carrots julienned (approx. 100g)
  • 3 Jalapeños thinly sliced into rounds with seeds
  • 1/2 cup Fresh Cilantro chopped (approx. 15g)
  • 1/2 cup Mayonnaise 120ml
  • 1/4 cup Sour Cream 60ml
  • 2 tbsp Apple Cider Vinegar 30ml
  • 1 tbsp Honey 15ml
  • 1/2 tsp Sea Salt To taste

Equipment

  • 1 Large Mixing Bowl For tossing the vegetables
  • 1 Small Whisk To emulsify the dressing
  • 1 Mandoline or Sharp Knife For fine shredding

Method
 

Prepare the Base
  1. Finely shred the green and purple cabbage using a mandoline or knife. Place in a large bowl with the julienned carrots.
  2. Slice jalapeños into thin rounds, keeping the seeds for visual appeal and heat. Chop the cilantro.
Mix and Serve
  1. In a small bowl, whisk together mayo, sour cream, vinegar, honey, and salt until glossy and thick.
  2. Pour dressing over vegetables. Add cilantro and jalapeños. Toss gently until evenly coated. Garnish with extra jalapeño rounds.

Notes

Chill for 30 minutes before serving for the best flavor meld.
Wear gloves when slicing jalapeños to prevent skin irritation.
