- Cook 1 lb (450g) bow tie pasta in salted water until al dente. Reserve 1 cup (240ml) of pasta water before draining.
- In a large skillet, sear sliced sausage coins in 1 tbsp (15ml) oil over medium-high heat until edges are browned and crispy.
- Add bell pepper strips to the pan. Cook until blistered and soft. Stir in minced garlic for 1 minute.
- Toss pasta into the skillet with reserved water and remaining olive oil. Stir until a glossy sheen forms.
