  • 1 lb Farfalle (Bow Tie) Pasta 450g
  • 1 lb Italian Sausage Links 450g, sliced into coins
  • 2 medium Bell Peppers 1 red, 1 yellow, sliced into strips
  • 3 cloves Garlic minced
  • 2 tbsp Extra Virgin Olive Oil 30ml
  • 1/2 cup Reserved Pasta Water 120ml
  • 1/4 cup Fresh Parsley chopped

  • 1 Large Skillet For searing sausage and peppers

Method
 

Preparation
  1. Cook 1 lb (450g) bow tie pasta in salted water until al dente. Reserve 1 cup (240ml) of pasta water before draining.
  2. In a large skillet, sear sliced sausage coins in 1 tbsp (15ml) oil over medium-high heat until edges are browned and crispy.
  3. Add bell pepper strips to the pan. Cook until blistered and soft. Stir in minced garlic for 1 minute.
  4. Toss pasta into the skillet with reserved water and remaining olive oil. Stir until a glossy sheen forms.

Notes

Use high-quality sausage links for the best searing texture.
Always reserve more pasta water than you think you'll need to adjust the sauce consistency.
