  • 1.5 cups Jasmine Rice Rinsed
  • 1.75 cups Water For steaming rice
  • 2 large Chicken Breasts 450g total weight
  • 1 tbsp Neutral Oil High smoke point
  • 4 rings Fresh Pineapple Caramelized on grill
  • 1 cup Pineapple Juice Base for glaze
  • 0.5 cup Soy Sauce For mahogany color
  • 0.25 cup Brown Sugar For sticky texture
  • 1 tbsp Fresh Ginger Minced
  • 3 cloves Garlic Minced
  • 2 Scallions Finely sliced
  • 1 tsp Toasted Sesame Seeds White

Equipment

  • 1 Grill or Cast Iron Grill Pan To achieve dark brown grill marks.
  • 1 Small saucepan For reducing the mahogany glaze.

Method
 

Preparation
  1. Whisk soy sauce, pineapple juice, brown sugar, ginger, and garlic. Reserve 1/2 cup for glaze. Marinate chicken in the rest for 30 minutes.
  2. Boil 1.75 cups water with jasmine rice. Simmer covered for 15 minutes, then fluff with a fork.
Cooking and Assembly
  1. Grill chicken breasts on medium-high for 6-8 minutes per side until charred with dark brown grill marks.
  2. Caramelize pineapple rings on the grill for 2 minutes per side until golden with seared edges.
  3. Simmer reserved marinade in a saucepan until it becomes a thick, glossy mahogany-colored glaze.
  4. Stack rice, then chicken, then pineapple. Pour glaze over the top and garnish with scallions and sesame seeds.

Notes

Ensure the glaze is thick enough to drip slowly for the best visual effect.
Rest the chicken before stacking to keep it juicy.
