Ingredients
  

Quesadilla Components
  • 2 cups (300g) shredded chicken Cooked rotisserie chicken works well
  • 1/4 cup (60ml) honey High quality floral honey
  • 1 tbsp (15ml) sriracha Adjust for heat level
  • 2 cups (225g) Monterey Jack cheese Freshly shredded for best melt
  • 4 large flour tortillas
  • 1/2 cup (120ml) sour cream Full fat for best flavor
  • 1 whole jalapeño Seeded and sliced
  • 1/4 cup (10g) fresh cilantro Chopped

Equipment

  • 1 Large Skillet or Griddle Cast iron preferred for best charring.
  • 1 Small Food Processor For the jalapeño cream sauce.

Method
 

Assembly and Cooking
  1. Toss shredded chicken with honey, sriracha, and red pepper flakes until glossy and amber-colored.
  2. Blend sour cream, half the jalapeño, and cilantro until smooth and pale-green.
  3. Assemble tortillas with cheese and chicken. Cook in a skillet over medium heat until golden with dark charred spots and melted cheese.
  4. Slice into triangles, drizzle with jalapeño sauce, and garnish with cilantro and remaining jalapeño rounds.

Notes

For the best dark charred spots, use a dry cast iron skillet.
Always shred your own cheese to ensure the perfect ooze and texture.
