  • 2 cups Granulated Sugar 400g
  • 4 large Eggs Room temperature
  • 1 tbsp Vanilla Extract 15ml
  • 1 cup Dutch-Processed Cocoa Powder 95g, sifted
  • 1 cup All-Purpose Flour 125g
  • 1 tsp Sea Salt 5g
  • 1 cup Hot Fudge Sauce 240ml, thick premium quality

Method
 

Prep and Mix
  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch metal loaf pan and line with parchment paper.
  2. In a large bowl, whisk melted butter and sugar for 2 minutes until well combined.
  3. Add eggs and vanilla. Whisk vigorously for 3 minutes until the batter is pale and thick to ensure a crackled top.
  4. Gently fold in sifted cocoa powder, flour, and salt until just combined. Do not overmix.
Assembly and Baking
  1. Spread half the batter into the pan. Drop spoonfuls of hot fudge over the batter and swirl gently with a knife. Top with remaining batter.
  2. Bake for 45-55 minutes until the top is crackled and a toothpick comes out with moist crumbs.
  3. Cool completely in the pan for at least 2 hours before slicing to allow the fudge ribbons to set.

Notes

Use a metal pan for the best crust.
