Ingredients
  

Main Components
  • 1 cup (185g) long-grain white rice rinsed
  • 1.5 cups (350ml) water for rice
  • 2 large ripe avocados mashed
  • 1 lb (450g) chicken breast cut into 1-inch cubes
  • 2 tbsp (30ml) honey divided
  • 3 tbsp (45ml) fresh lime juice divided
  • 1/2 cup (15g) fresh cilantro finely chopped

Equipment

  • 1 Cast Iron Skillet For searing the chicken cubes.
  • 1 Food ring mold or large ramekin To create the vertical stack layers.

Method
 

Prepare the Components
  1. Combine rinsed rice, water, and salt. Bring to a boil, then simmer covered for 15 minutes. Let sit for 5 minutes then fluff.
  2. Season chicken cubes with salt and pepper. Sear in a hot skillet with oil until golden brown and charred (about 7 minutes). Drizzle with 1 tbsp honey at the end.
  3. Mash avocados with 1 tbsp lime juice and salt until creamy but structurally sound.
Assembly
  1. Using a mold, layer rice first, then mashed avocado. Top with the seared chicken cubes.
  2. Whisk remaining lime, honey, and cilantro. Drizzle over the stack and finish with cracked black pepper.

Notes

Pat the chicken dry before searing to ensure visible char marks.
Use a greased ring mold to prevent the rice from sticking.
